For example.. aplpe cider vinegar or umeboshi plum- rather than red wine or balsamic..?? Or raspberry vinegar? If these are not an option, I think you could even use juices... I think a good substitute for sour cream might be yogurt or buttermilk, unless you're intolerant to dairy in general. In that case, there's tofu sour cream, or tofu cream cheese, or you can even make tofu based salad dressings using soft silken tofu. I'm sure there's bunches of recipes in the archives. I stopped buying sourcream becasue it would go bad for as often as we'd use it.. and I eat yogurt anyway.. so I just buy plain organic lowfat yogurt, and stir in fruit when i want that, and use it in place of sour cream when we need that..
