Sesame Beans

Amount Measure Ingredient -- Preparation Method

1 pound fresh green beans

1 tablespoon lemon juice

1 tablespoon soy sauce

1 teaspoon sesame oil

4 small green onions -- minced

1 tablespoon lightly toasted sesame seeds

 

Trim beans. Leave whole or cut into 2- to 3-inch pieces. Boil in a small amount

of water or steam until just tender. Plunge hot beans into cold water to halt

cooking process. Drain and transfer to a mixing bowl.

 

In a separate bowl, whisk together lemon juice and soy sauce. Slowly add sesame

oil and whisk constantly. Pour mixture over beans in bowl, sprinkle on minced

green onions and sesame seeds, and mix again. Serve at room temperature.
