Apple-cinnamon Breakfast Bread (king Arthur)

3 1/2 cups King Arthur Unbleached All-Purpose Flour

1/4 cup Baker's Special Dry Milk -- or nonfat dry milk

1/4 cup potato flour OR 1/2 cup potato flakes

3 tablespoons soft butter

1 1/2 teaspoons salt

3 tablespoons brown sugar

1 teaspoon Butter-cinnamon Flavor -- OR 1 teaspoon ground cinnamon

2 1/2 teaspoons instant yeast

1/2 cup chopped walnuts

1/2 cup cinnamon Flav-R-Bites -- or cinnamon chips

3/4 cup apple nuggets or chopped dried apples

1 1/3 water* -- up to 1 1/2

 

*Use the lesser amount in the summer, the greater amount in the winter, and

something in between in the spring and fall.

 

Place all of the ingredients into the pan of your bread machine in the order

recommended by the manufacturer. Program for basic white bread, and press

Start. Check the dough's consistency about 7 minutes after the kneading cycle

begins, adding additional water or flour to form a smooth, soft ball of dough.

Allow the machine to complete its cycle. Remove the bread when it's done, and

let it cool completely before slicing. Yield: 1 loaf. Note: This bread makes

great toast!

 

You may also make this bread without the aid of a bread machine; or make the

dough in a bread machine, and bake it in the oven. Simply make the dough using

your usual method (by hand, electric mixer or bread machine); shape it into a

log; and place it in a lightly greased 9 x 5-inch bread pan. Allow the loaf to

rise, covered, until it's crowned about 1 inch over the rim of the pan. Brush

the risen loaf with the beaten egg white, and sprinkle it with the seeds. Bake

it in a preheated 350øF oven for 35 minutes, or until its interior temperature

registers 190øF on an instant-read thermometer. Remove the bread from the oven,

remove it from the pan, and cool it on a wire rack. Yield: 1 loaf.
