Ricotta Puffs

1 lb. ricotta cheese

3 eggs -- beaten

1 teaspoon baking powder

3 tablespoons sugar

1 C flour

1/2 teaspoon salt

2 C oil

sugar -- granular or confectioner's for dusting puffs

 

 

 

Mix ricotta, eggs, sugar and baking powder. Refrigerate for 1 hour. Mix flour

and salt and mix into ricotta/egg mixture until well combined. Heat oil in a

large skillet or deep fryer. When oil is hot, drop batter by tablespoonfuls in

hot oil. Cook, turning once, until golden brown on both sides, about 1 minute

per side or less. Drain on paper towels and sprinkle with either granulated or

confectioner's sugar.
