Baked Breaded Tofu Cutlets

1 pound firm or extra-firm tofu

1/3 cup wheat germ

1 teaspoon salt-free seasoning mix

1/2 teaspoon salt

3/4 cup plain low-fat yogurt

2 tablespoons soy mayonnaise or reduced fat mayonnaise

1 1/2 tablespoons pickle relish

2 teaspoons Dijon mustard -- 1/2 " cubes

 

Preheat oven to 450F. Cut tofu into 1/2-inch-thick slices. Blot well with

clean towel or several layers of paper towels, then cut into 11/2-inch-wide

strips.

 

Combine wheat germ, seasoning mix and salt on a plate and lightly bread tofu

sticks. Arrange breaded tofu on lightly oiled nonstick baking sheet. Bake

until the cutlets are golden and firm, 15 to 20 minutes.

 

Meanwhile, combine remaining ingredients in small bowl and stir well. Serve

cutlets with sauce for a topping.
