Guest guest Posted January 2, 2003 Report Share Posted January 2, 2003 * Exported from MasterCook * Better Brussels Sprouts Recipe By :Transalta Utilities Serving Size : 4 Preparation Time :0:00 Categories : send vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound brussels sprouts--trimmed 1/2 teaspoon salt 2 tablespoons finely chopped onion 2 tablespoons butter or margarine 2 tablespoons flour 3/4 teaspoon dry mustard 1/4 teaspoon dried tarragon leaves--crushed 1 cup chicken bouillon 1 tablespoon vinegar In a saucepan, bring 1 inch water to a boil. Add brussels sprouts and salt. Cover and cook 10 to 15 minutes, or until tender. Drain. In an electric frypan saute' onion in butter or margarine until tender. Stir in flour, dry mustard and tarragon to form a smooth paste. Gradually add chicken bouillon and vinegar, stirring until smooth and thickened. Add brussels sprouts and heat, but do not boil.
