Grilled Oyster Mushrooms

2 tablespoons olive oil

1 tablespoon chopped fresh basil

2 teaspoons balsamic or wine vinegar

pinch salt

pinch pepper

8 ounces oyster mushrooms

 

In large bowl, whisk together oil, basil, vinegar, salt and pepper. Lightly

brush off any dirt from mushrooms. Trim off tough stems and discard. Add

mushrooms to bowl; toss gently.

 

Place on greased grill over medium heat; close lid and cook, turning once, for 4

to 8 minutes or until lightly browned and tender but firm. Makes 4 appetizer

servings.

 

PER SERVING: about 73 cal, 1 g pro, 7 g total fat (1 g sat. fat), 3 g carb, 1 g

fibre, 0 mg chol, 1 mg sodium. % RDI: 5% iron, 3% vit C, 4% folate.
