Recipe By :Malak Badaa Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large eggplant 1 medium tomato -- peeled & diced 1 tsp. chopped garlic 2 tsp. Moroccan hot sauce (Charmoulla Du Maroc) 1/2 tsp. paprika 2 tsp. lemon juice 2 tbl. olive oil (extra virgin) Salt to taste Peel the eggplant and dice to medium pieces. In medium pot, boil the eggplant for 10 minutes. Drain them and let them cool for few minutes. Smash them with a fork, add the ingredients and cook on very low heat 10 to 15 minutes, stirring occasionally. Serve cold or room temperature with bread or tortilla chips.
