Crudite's With Spicy Peanut Dipping Sauce

THE SAUCE:

8 tablespoons natural peanut butter

8 tablespoons soy sauce

8 tablespoons mayonnaise

4 tablespoons dark brown sugar

6 cloves garlic -- finely chopped (6 to 8)

4 tablespoons fresh lemon juice

2 teaspoons red pepper flakes

THE VEGGIES:

bell peppers -- red, yellow, and orange

cucumbers

summer squash

asparagus -- very lightly steamed

snap peas

scallions

broccoli florets

cherry tomatoes

 

To make the sauce, whisk all of the sauce ingredients vigorously in a small

mixing bowl. If your mixture seems too thick to be dippable add some water a

tablespoon at a time. Cover with plastic wrap and refrigerate at least 30

minutes. The dipping sauce can be made up to 2 days ahead.

 

Arrange your fresh vegetables on a serving platter, leaving room in the center

or off to one side for the dipping bowl. Pour the chilled sauce into a dipping

bowl and garnish with a few fresh flowers or sprigs of garden herbs. Serves 20.

 

When I bring hors d'oeuvre to a party I always consider two factors: the problem

of being too busy running my two jewelry stores to have any cooking time, and

wanting to bring a healthful plate of something I myself can eat.

 

If it's Sunday, I'll have time to make this spicy peanut dipping sauce with an

array of raw or nearly raw assorted vegetables. Choose what's fresh and local;
