Guest guest Posted January 18, 2003 Report Share Posted January 18, 2003 * Exported from MasterCook * Chiles Con Queso Recipe By : Mexico:The Vegetarian Table by Victoria Wise Serving Size : 1 Preparation Time :0:00 Categories : Appetizers Cheese Mexican Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons (1/2 stick) butter 1 large onion -- finely chopped 6 fresh Anaheim chilies, roasted, peeled -- seeded OR canned green chilies 1 large tomato, peeled and seeded -- 1/4-inch dice 1 pound queso asadero, Monterey Jack, farmer's -- or cream cheese 3/4 cup Homemade Thickened Cream, 1/2 and 1/2 or -- sour cream thinned with 1 1/2 tablespoons -- heavy cream Salt and Pepper to taste Fresh corn tortillas, warmed or -- tortilla chips Melt the butter in a large skillet. Add the onion and cook over medium heat until slightly wilted but not browned, about 5 minutes. Add the chilies and tomato and simmer until the vegetables are soft, about 10 minutes. Add the cheese and cream and stir over medium-low heat until the cheese melts and the mixture is smooth, about 2 to 3 minutes.
