Eggless Egg Sandwiches

Amount Measure Ingredient -- Preparation Method

16 ounces firm tofu -- rinsed and mashed

5 1/2 tablespoons Bill’s Best Chik’Nish Seasoning

1/4 cup minced onion

2 tablespoons pickle relish (optional)

1/3 cup low-fat mayonnaise or soy mayonnaise

 

Mix all ingredients. Add enough mayonnaise to get desired consistency. Serve

with sprouts and leaf lettuce.

 

Yield: 6 half-cup servings. Per 1/2-cup serving: Calories: 150; carbohydrate: 8

grams; protein: 8 grams; fat: 10 grams; fiber: less than 1 gram; sodium: 800

milligrams; cholesterol: 0 milligrams.
