Guest guest Posted January 25, 2003 Report Share Posted January 25, 2003 * Exported from MasterCook * Strawberry, Raspberry, or Cherry Jelled Fruit with a Tofu Crème Layer Recipe By :The Passionate Vegetarian, Crescent Dragonwagon Serving Size : 5 Preparation Time :0:00 Categories : Passionate Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups boiling water -- preferably spring or filtered 1 3 oz box Hain SuperFruit Naturally Flavored Dessert Mix -- (strawberry, raspberry, or cherry) 1 recipe Tofu Crème 1 1/2 cups frozen, no sugar added strawberries, raspberries, or black cherries additional fresh fruit and mint sprigs -- optional Have ready five 1-cup serving dishes, preferably glass, so you can see the colors and layers of the finished dessert. (Or use custard cups, lighted coated with cooking spray, and reverse the salad out onto a plate at serving time.) Measure the boiling water into a 4-cup Pyrex glass measuring cup. Add the Hain's and whisk like crazy, until the mix has dissolved (it will be clumpier initially than regular gelatin, but it will dissolve; just keep whisking.) Scoop out 1/4 to 1/3 cup of the dissolved Hain's. Buzz it into the Tofu Crème. Stir the still frozen fruit into the dissolved Hain's. Almost immediately, it will start to set up. Spoon about half of the mixture into the prepared cups, then spoon the Tofu Crème over that, and top with the remaining Hain's mixture. Cover, refrigerate until cold (at least 1 1/2 hours), and serve -- in the cup, reversed out, and garnished or not as you prefer.
