Avocado, walnuts, grapefruit, greens.... * Exported from MasterCook * Pacific Rim Salad with Barley Recipe By :Dopp, Willrich, Rebbe Serving Size : 4 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup pearl barley 3 tablespoons cider vinegar 1 tablespoon lime juice salt and pepper 2 tablespoons cold-pressed walnut oil 1 teaspoon small mint leaves 1 tablespoon chopped fresh chives 2 pink grapefruit 3 1/2 ounces spinach leaves 1 head iceberg lettuce 1 avocado -- (1 to 2) 3 1/2 ounces fresh shiitake mushrooms 1 tablespoon sunflower or vegetable oil -- for sauteing Times: Preparation: about 30 minutes Stand: 6-15 hours soaking 1. Soak barley in 1 cup cold water for 6-15 hours. 2. Mix vinegar, lime juice, salt, pepper, walnut oil, mint, and chives in a bowl. 3. Peel grapefruit, removing all the white pith and membrane. Halve crosswise, cut into sections, and add to the vinaigrette. Remove stems from spinach and tear into pieces. Tear the lettuce. Wash both and shake dry. Peel and pit avocado; dice the flesh. Mix with the lettuce and spinach in the dressing. 4. Wipe mushrooms with a damp cloth, remove stems, and cut caps into sixths. Wash and drain barley. Heat sunflower oil in a frying pan. Brown the barley in it over medium heat about 2 minutes, stirring constantly. Add mushrooms and fry about 2 minutes or until brown. Remove from heat.
