Nothing to rave about, but simple and easy. ~ Brenda * Exported from MasterCook * Classic Apple and Blue Cheese Salad Recipe By :Cooking Light, Jan/Feb 2003 Serving Size : 6 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons fresh lemon juice 2 teaspoons sugar 1 1/2 teaspoons extra virgin olive oil 2 teaspoons Dijon mustard 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 6 cups bibb lettuce leaves -- (about 2 heads) [i used Romaine lettuce] 1 cup Granny Smith apples -- chopped 2 tablespoons crumbled blue cheese 2 tablespoons chopped green onions 1 tablespoon chopped walnuts -- toasted 1. [Tear lettuce leaves into bite sized pieces.] Combine first 6 ingredients in a large bowl, stirring with a whisk. Add lettuce and remaining ingredients, tossing gently to coat. Yield: 6 servings (serving size: about 1/4 cup). Exchanges: 0 Grain(Starch); 0 Lean Meat; 0 Vegetable; 0 Fruit; 1/2 Fat; 0 Other Carbohydrates. Brenda's review: Good, easy, light flavors. Doesn't compete with the main dish. I halved the recipe for the two of us...and used Romaine lettuce. I had to use Dijonaise, because I was out of Dijon. (Perhaps that made it milder and perhaps that's a good thing for those of us who aren't wild about Dijon??) I think this would be a very nice salad to serve company and especially if the rest of the dinner is heavy. I wouldn't give this a 10 and it wasn't a 'must-have' dish...but it works fine and is worth a repeat. I served it alongside a quiche-like 'Egg & Green Chili Bake' and garlic toast.
