Guest guest Posted February 5, 2003 Report Share Posted February 5, 2003 meatless * Exported from MasterCook * Meat Loaf: Meatless with Mushrooms, Beans and Rice Recipe By :Christine Makuch Serving Size : 6 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- VEGETABLES: 8 ounces mushrooms -- minced 1 1/2 cups finely chopped onions 1 1/2 cups finely chopped carrots 2 tablespoons minced garlic SEASONINGS: 3/4 teaspoon salt 1/2 teaspoon pepper MAIN INGREDIENTS: 19 ounces canned white kidney beans -- rinsed and mashed 1 1/2 cups cooked brown rice 1/2 cup oats -- uncooked 1 large tomato -- finely chopped 1 large egg TOPPING (OPTIONAL): 1 tablespoon oats Heat oven to 350F. Have ready a 9 x 5-in. loaf pan. Coat a large nonstick skillet with nonstick cooking spray. Add Vegetables and saute until lightly browned. Let cool. Stir in Seasonings and Main Ingredients. Shape mixture to fit the loaf pan. Add Topping. Place pan directly on shelf in oven; add boiling water to come halfway up sides of baking dish. Bake for 45 minutes at 350F or until until center of loaf registers 160F on an instant-read thermometer. Remove dish from roasting pan. Let loaf stand 5 minutes before slicing. Serves 6.
