Vegetarian Chili

Amount Measure Ingredient -- Preparation Method

1 15 can of kidney beans

1/2 onion, diced

1 red pepper, diced

1 green pepper, diced

2 Te Olive oil

2 Jalapeño pepper, diced

3 Cu Tomatoes, chopped

1 Cu Vegetable juice (V-8 okay)

2 ta cumin

2 ta chili powder

Salt

pepper

1 bay leaf

3/4 Cu TVP

2 Cu Vegetable stock

 

Directions: Sauté diced vegetables in olive oil. Add tomatoes and stew

for 5 minutes. Add V8 juice and continue to simmer. Add seasonings and

bay leaf. Add TVP and allow to absorb tomato flavor before adding

stock. Simmer on low for 3 minutes. Serves 4. From The Vegetarian

says Dorfman. " The phytochemical capsaicin, which is found in the

jalapenos, acts as a metabolic stimulator to increase the body's heat

and encourage the intake of liquids (which, in turn, will help flush

the system of germs). The onions will boost immunity too, and the

tomatoes provide you with vitamin A and C. "

Notes: I love adding more peppers and chili power to make a very

spiicy chili.
