Guest guest Posted February 14, 2003 Report Share Posted February 14, 2003 * Exported from MasterCook * David Page's Wild Rice Barley and Cracked Wheat Salad Recipe By :David Page, Home Restaurant, Manhattan, New York Serving Size : 12 Preparation Time :0:00 Categories : Chefs & Restaurants Grains & Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon unsalted butter 1 tablespoon olive oil 3/4 cup minced leeks 3/4 cup minced onion 1 1/2 cups cooked wild rice 1 1/2 cups cooked barley 1 1/2 cups cooked cracked wheat -- (bulgur) 1/2 cup olive oil 1/4 cup red wine vinegar 2 tablespoons minced fresh chives 2 tablespoons chopped parsley 1 cup sliced blackberries -- generous Salt and pepper 1. In a skillet over medium heat slowly cook the leeks and onion in the butter and olive oil until they are softened. 2. Set aside to cool. 3. Toss the cooled vegetables with the remaining ingredients and season with salt and pepper.
