Salt 2 Cups semolina 1 Cup white flour. Combine sponge ingredients and let stand for 15 minutes. Stir the 1 1/4 cups whole wheat flour into the sponge. Add remaining Dough ingredients. Stir to combine. Knead for five minutes-let rise 1 hour before using.
