Guest guest Posted March 3, 2003 Report Share Posted March 3, 2003 * Exported from MasterCook * Spicy Corn Soup Recipe By :Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Soups Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 medium onion -- chopped 1 garlic clove -- minced 1/4 teaspoon cayenne pepper 1/4 teaspoon ground cumin 1 medium potato -- peeled, 1/4-inch dice 4 cups water 3 cups corn kernels 1 cup soy milk 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper canned hot chili peppers -- minced 1. Heat the oil in a large saucepan over medium heat. Add the onion, garlic, cayenne, and cumin and cover. Reduce the heat to low and cook until the onion is softened, about 5 minutes. Add the potato and water. Bring to a boil over high heat. Add the corn, reduce the heat and simmer until the potato is tender, about 20 minutes. 2. In a food processor, puree half the soup. Combine the pureed soup with the rest of the soup and let cool to room temperature. Just before serving, stir in the milk and salt and pepper. Ladle the soup into bowl and sprinkle each serving with minced chiles if desired. Serves 4 to 6.
