Guest guest Posted February 25, 2003 Report Share Posted February 25, 2003 another idea for cauliflower soup. * Exported from MasterCook * Cauliflower Soup with Melted Gouda Croutons Recipe By :Janet Hazen: Glories of the Vegetarian Table Serving Size : 12 Preparation Time :0:00 Categories : Chowders & Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium onions -- rough chop 5 cloves garlic -- minced 1 tablespoon ground coriander 1 1/2 teaspoons caraway seed -- ground 1/2 teaspoon cayenne 1/3 pound unsalted butter -- for sauteeing 6 cups rough-chopped cauliflower -- core included 1 carrot -- coarse chop 1/4 cup sherry 12 cups defatted low-sodium vegetable stock Salt and pepper -- to taste 3 cloves garlic -- minced 1/2 cup olive oil -- for bread 1 baguette -- (thin) 1/2 pound imported Gouda cheese 1. Cook the onions, garlic and spices in the butter over medium heat until the onions are soft. Add the cauliflower, carrot and sherry and cook over high heat for 2 to 3 minutes, stirring, all the while. Add the stock and bring to a boil. Reduce heat and simmer until the cauliflower is tender but not mushy. Cool slightly. Puree in a blender until smooth. Return to the pot and bring pureed soup to a boil. Reduce heat, add salt and pepper, and simmer for 10 to 15 minutes. Taste and adjust seasoning. 2. Preheat oven to 350F. Combine the garlic with the olive oil. Slice the baguette into rounds 1/4 inch thick, brush with the garlic oil and bake croutons until golden brown. Slice the cheese to fit the croutons. Just before serving the soup, place the cheese-topped croutons under the broiler and heat until the cheese melts. NOTES : If you're not crazy about cauliflower, or haven't found an interesting recipe for cauliflower soup, try this one.
