Guest guest Posted March 5, 2003 Report Share Posted March 5, 2003 main dish veg * Exported from MasterCook * Spinach Burritos Recipe By :Robin Robertson Serving Size : 8 Preparation Time :0:00 Categories : Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked pinto beans 1 tablespoon olive oil 1 small onion -- minced 1 teaspoon minced garlic 2 jalapenos or other chilies -- seeded, minced 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 10 ounces frozen chopped spinach -- thawed, well drained 1 cup shredded soy cheese alternative or Monterey Jack cheese 8 each 8-inch flour tortillas -- warmed 1. Place the cooked beans in a food processor and chop coarsely with short on and off bursts. Set aside. 2. Heat the oil in a large skillet over medium heat. Add the onion and garlic, cover and cook 5 minutes or until softened, stirring occasionally. Add the jalapenos, salt, chili powder and pepper. Stir in the spinach and reserved beans and heat through, about 2 minutes. Remove from the heat and add the soy cheese, stirring to combine well. 3. To serve, spoon equal amounts of the filling mixture into the center of each tortilla. Top with a spoonful of salsa, to taste. Fold the bottom edge up over the filling, then fold the right and left sides toward the center, overlapping the edges.
