Guest guest Posted March 6, 2003 Report Share Posted March 6, 2003 * Exported from MasterCook * Grapefruit and Pumpkin Seed Salsa Recipe By : Mexico:The Vegetarian Table by Victoria Wise Serving Size : 1 Preparation Time :0:00 Categories : Mexican Salsa Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium-large pink grapefruit 1/3 cup toasted pumpkin seeds 1 serrano or 1/2 jalapeno chili -- stemmed and minced 1 medium shallot -- minced 1 tablespoon cilantro leaves, whole -- chopped With a knife, remove the peel from the grapefruit, cutting through the white membrane all the way to the pulp. Cut the grapefruit into 1/4-inch dice and transfer, along with the juices, to a bowl. Add the remaining ingredients and stir to mix.
