This one looks like it would be a good main dish. (And is 24% calories from

fat.) I like to find recipes that call for fresh spinach. I never have cared

for the frozen stuff...tastes fishy to me for some reason. (And look: brown

rice! All the weight folks are saying to eat brown instead of white rice. I'm

tryin!!! Maybe this recipe will be a winner!!) Brenda

Spinach and Rice with Feta Cheese

6 cups chopped fresh spinach

2 cups brown rice -- cooked

3/4 cup feta cheese -- cut into 1/4-inch cubes

1 egg

2 tablespoons chopped fresh parsley

1/4 teaspoon freshly ground pepper

1 tablespoon butter

2 tablespoons wheat germ

 

Preheat oven to 350 F. In a bowl, mix together the spinach, rice, and cheese and

set aside. Beat the egg in a small bowl and add the parsley and pepper. Combine

the egg and spinach mixtures and transfer to a greased 2-quart casserole. Dot

the top with butter, then sprinkle with the wheat germ. Bake for 20 to 25

minutes. Serves 4.

 

THIS CLASSIC BLEND OF SPINACH, brown rice, and cheese makes a wholesome main

meal in spring or fall. The Northwest's climate, with a long, cool spring and

mild fall, is ideal for growing large and tasty spinach plants.
