I like to find recipes that call for fresh spinach. I never have cared for the frozen stuff...tastes fishy to me for some reason. (And look: brown rice! All the weight folks are saying to eat brown instead of white rice. I'm tryin!!! Maybe this recipe will be a winner!!) Brenda * Exported from MasterCook * Spinach and Rice with Feta Cheese Recipe By :The City Gardener's Cookbook (1994) Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups chopped fresh spinach 2 cups brown rice -- cooked 3/4 cup feta cheese -- cut into 1/4-inch cubes 1 egg 2 tablespoons chopped fresh parsley 1/4 teaspoon freshly ground pepper 1 tablespoon butter 2 tablespoons wheat germ Preheat oven to 350 F. In a bowl, mix together the spinach, rice, and cheese and set aside. Beat the egg in a small bowl and add the parsley and pepper. Combine the egg and spinach mixtures and transfer to a greased 2-quart casserole. Dot the top with butter, then sprinkle with the wheat germ. Bake for 20 to 25 minutes. Serves 4.
