Guest guest Posted March 9, 2003 Report Share Posted March 9, 2003 * Exported from MasterCook * Grilled Tortilla Pizza Primavera Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Flour Tortillas -- Light or Fat Free Soft Taco Size 1/2 medium Red Onion thinly sliced 1 medium Yellow Bell Pepper thinly sliced 3 large Plum Tomatoes seeded and thinly sliced 1 Teaspoon Red Jalapenos -- seeded and minced, optional 1 Bunch Spinach -- small bunch, stems removed, thinly sliced 3 Tablespoons Italian Dressing -- low calorie 1 1/2 Cups Gouda Cheese -- low fat, shredded Preheat oven to 500 degrees F. Toss all ingredients (except tortillas and gouda cheese) in a large bowl and marinate for 10 minutes. Warm tortillas in an un-oiled skillet until crisp. Stir one cup of cheese into vegetable filling. Divide cheese mixture among 4 tortillas. Sprinkle tops with additional 1/2 cup of cheese. Place tortillas on sheet pan and bake for 10 minutes or until cheese melts. Cut tortillas into 4 wedges and serve.
