''Moosewood' author whips up new plateful

of meals to rise and shine.

 

In her latest recipe collection, Molly Katzen, author of the " Moosewood

Cookbook, " champion of healthful, delectable vegetarian food, focuses

on breakfasts.

 

Aren't we lucky? Great good fortune for readers to have the choices she

offers in " Sunlight Cafe " (Hyperion, $29.95).

 

The book delivers more than 350 straightforward breakfast recipes - for

omelets and pancakes, muffins and " morning cake, " among other treats.

 

" Breakfast is everybody's favorite meal, " she writes in her

introduction, " but ironically, relatively few of us seem to make the

time to actually prepare or enjoy it. " She says the ideas in her book

are meant to encourage you to rise and shine - and there's no doubt its

pages, decorated with her own colorful artwork, can help brighten

breakfast tables.

 

A tasty recipe for scrambled eggs suggests that cooking green chiles

and tortilla strips over strong heat, with choice seasonings, will

transform them into an intense backdrop for the eggs. As a garnish, try

cherry tomatoes, so the dish looks as compelling as it smells.

 

Scones, a basic quick bread, can be sweetened and fruited up - then,

cut into triangles. They are great with a cup of latte to start the day

at breakfast time or to serve for brunch.

 

Another fruity breakfast, French toast dressed up with canned apricots,

is easy to make and a sunny addition to a winter breakfast or brunch

menu. It, too, gets a gentle taste boost from cinnamon and nutmeg.
