Guest guest Posted March 13, 2003 Report Share Posted March 13, 2003 * Exported from MasterCook * Polenta With Swiss Chard and Portobello Mushrooms Recipe By :Bob Green Serving Size : 0 Preparation Time :0:00 Categories : Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1/4 cup chopped onion 1 teaspoon minced garlic 2 large portobello mushroom caps -- thinly sliced 1 pound Swiss chard (or 1 large bunch) Salt and freshly ground pepper 2 cups vegetable stock 1/2 cup polenta (corn meal) 1/4 cup grated Parmesan or Asiago cheese Chopped parsley -- for garnish Wash the chard well. Remove large stems. Tear leaves into bite-size pieces. Heat a large nonstick pan over medium-high heat. Add 1 tablespoon olive oil and saute the onion and garlic until soft, about 5 minutes. Add the remaining oil and mushrooms. Cook until soft, 3 to 5 minutes. Add the Swiss chard and 2 tablespoons of water. Cover pan and cook until the chard is wilted, about 4 minutes. Season with salt and pepper; set aside. In a 2-quart saucepan, bring the stock to a boil. Gradually add polenta, whisking constantly. Lower heat to medium and continue to cook, stirring often, for about 20 minutes. Sprinkle with salt, pepper and grated cheese. Divide polenta among 4 serving dishes and top with the mushroom-chard mixture. Sprinkle with chopped parsley. Makes 4 servings. Per serving: 208 calories (39 percent from fat), 9 g fat (2.1 g saturated, 5.5 g monounsaturated), 4.9 mg cholesterol, 6.5 g protein, 26.1 g carbohydrates, 4 g fiber, 168 mg sodium.
