Guest guest Posted March 16, 2003 Report Share Posted March 16, 2003 I have a few " odds & ends " recipes to post while I have the time! * Exported from MasterCook * Black Bean Enchiladas Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Fantastic Foods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 box Fantastic Foods black beans 2 cups enchilada sauce 8 corn tortillas 4 1/2 cups grated cheddar or jack cheese 1 avocado -- sliced (optional) 2 green onions -- chopped 1/3 cup sliced black olives 1/2 cups sour cream Prepare 1-1/2 cups Fantastic Foods Instant Black Beans as directed. Boil Enchilada sauce in a saucepan large enough to insert tortillas. Remove from heat and dip tortillas in sauce one by one to soften them and coat with sauce. Lay one sauced tortilla on a plate and place 1/2 cup of the beans in center. Sprinkle 1/3 cup grated cheese over beans. Add one avocado slice if desired. Fold sides of tortillas over filling and place seam side down in a baking pan. Repeat process with other tortillas. When pan is full pour remaining enchilada sauce over tortillas or enough to make a shallow layer in bottom of pan to moisten them well so they won’t dry out while baking. Garnish with remaining cheese, green onions and black olives. Bake at 350 degrees for 20 minutes or until heated throughout. Top each tortilla with a dollop of sour cream when serving. Serve with Fantastic Foods Spanish Rice.
