Guest guest Posted March 16, 2003 Report Share Posted March 16, 2003 * Exported from MasterCook * Black Bean Salsa Couscous Burritos Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Fantastic Foods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 cups Fantastic Foods black bean salsa couscous cups -- prepared according to package directions. 1 1/2 cups shredded monterey jack cheese with jalapeno peppers 10 white flour tortillas -- warmed 2 avocados -- mashed 1 cup sour cream 1 cup chunky tomato salsa 1/2 cup chopped green onion Preheat oven to 300 degrees. Spread prepared Black Bean Salsa Couscous evenly in ungreased 9 " x 9 " baking dish. Top with cheese and bake for 10 minutes, until cheese is completely melted. Remove and let cool slightly. Put 2-3 heaping spoonfuls of couscous mixture in the center of each tortilla. Add avocado, sour cream, salsa and green onion to taste, then roll up into a cylinder shape and enjoy!
