Guest guest Posted March 17, 2003 Report Share Posted March 17, 2003 * Exported from MasterCook * St. Paddy's Day Stew Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : New Import VT Com {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 1 large onion -- sliced 1/2 small green cabbage -- thinly sliced 3 cups cubed peeled winter squash 2 parsnips (optional) -- peeled, sliced (1 cup) 1/2 cup uncooked rolled oats 6 cups water or vegetable stock 1/2 cup dulse -- shredded Salt and pepper -- to taste Toasted sunflower seeds -- for garnish Chopped fresh chives -- for garnish Heat oil in 4-quart stockpot over medium heat. Add onion and cabbage, and saute for 3 minutes, until onion is tender-crisp. Add squash and saute 2 minutes more. Add parsnips (if desired). Sprinkle oats over vegetables. Add water or stock to pot. Bring to a boil over high heat. Reduce heat to medium-low. Cover. Simmer 10 to 15 minutes, until squash is tender. Rinse dulse in a strainer (it will shrink) and add to stew at end of cooking. Season with salt and pepper (if desired). Serve hot, garnished with sunflower seeds and chives. Makes 6 to 8 servings. TIP: * Parsnips are white root vegetables with a sweet, nutty flavor. * Dulse is a flavorful purple sea vegetable with a salty, nutty flavor.
