New Potatoes with Horseradish Sauce

Amount Measure Ingredient -- Preparation Method

2 pounds new potatoes

1 cup plain yogurt

or blended soft tofu

or creme fraiche

1 piece 3-inch fresh horseradish root -- peeled, grated

or 4 Tbs. white horseradish sauce

1 Pinch sugar

Salt and white pepper -- to taste

 

Boil potatoes until they can be pierced with a fork; drain and place in serving

bowl.

 

In a separate bowl, combine remaining ingredients; pour over potatoes. Let sit a

few minutes to allow flavors to develop. Serve warm. Makes 4 to 6 servings.
