Apple Nut Cake

Amount Measure Ingredient -- Preparation Method

3/4 cup unsweetened applesauce

3/4 cup brown sugar

1 teaspoon vanilla

1 3/4 cups whole wheat pastry flour

1 1/2 teaspoons cinnamon

1/2 teaspoon salt

3/4 cup unsweetened apple juice

2 cups diced unpeeled apples

1 cup chopped pecans or walnuts

1/2 cup raisins

OPTIONAL:

Whipped topping -- or

frozen vanilla yogurt -- or

ice cream

 

Preheat oven to 350F. Grease a 9-inch square or round cake pan.

 

In a medium bowl, blend together applesauce, brown sugar and vanilla with wooden

spoon or mixer. Add flour, cinnamon and salt. Stir a few times to combine. Add

juice; blend well.

 

Using a wooden spoon, fold in apples, pecans or walnuts and raisins. Pour into

baking pan. Baked for 30 to 40 minutes, or unitl tester inserted in cake comes

out clean. Top with whipped topping, frozen yogurt or ice cream if desired.

Makes 12 servings.
