Guest guest Posted March 18, 2003 Report Share Posted March 18, 2003 * Exported from MasterCook * Green Bean Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds green beans -- trimmed and sliced (2 " lengths) 2 1/2 tablespoons red wine vinegar or balsamic vinegar 1 teaspoon Dijon-style mustard 1 clove garlic -- minced 5 tablespoons good quality extra virgin olive oil 1/2 cup chopped green onions 1 1/2 tablespoons chopped parsley Cook green beans in salted boiling water until tender. While beans are cooking, whisk together vinegar, mustard, garlic, salt, pepper and oil. Pour over green beans while they are still warm. Toss with green onions and parsley. Chill. May be served chilled or at room temperature.
