Guest guest Posted March 23, 2003 Report Share Posted March 23, 2003 * Exported from MasterCook * Silken Tofu in Spicy Red Coconut Sauce Recipe By :Deborah Madison Serving Size : 4 Preparation Time :0:00 Categories : Curries & Braises {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup basmati rice 2 10-oz firm silken tofu -- (10 oz box) or soft tofu (1-pound water packed) 2 teaspoons roasted peanut oil 2 large garlic cloves -- minced 1 tablespoon finely chopped ginger 1 bunch scallions with green tops -- sliced into rounds 14 ounces canned light coconut milk 2 tablespoons mushroom soy sauce or regular soy sauce 1 teaspoon Thai red curry paste -- (1 to 2) or to taste 4 large basil leaves -- slivered First, begin the rice or put up the water for the pasta. Dice the tofu into small cubes, about 1/3 inch across. Heat the oil in a wide, nonstick skillet. Add the garlic, ginger and scallions, and stir-fry for 1 minute. Add the coconut milk and soy sauce, then stir in the curry paste, adding more to taste if you like it really hot. Add the tofu and simmer until heated through. Spoon over the cooked rice or noodles and garnish with the basil leaves. VARIATION: Replace rice (1 cup) with Chinese egg noodles (8 oz).
