thank's amanda's mom for the lentil ideas. here's a salad that caught my eye

Easy French Lentil Salad

Amount Measure Ingredient -- Preparation Method

2 cups dried French lentils

5 cups spring or filtered water

Additional water as needed

1 medium butternut squash -- cubed

1 pound spinach or chard -- washed and chopped

1 lemon -- zest and juice

3 Tablespoons extra virgin olive oil -- (3 to 4)

1 Tablespoon balsamic vinegar -- (1 to 2)

1 Small red onion -- thinly sliced

Sea salt and freshly cracked pepper

1 pound Mixed Baby Greens -- (Earthbound)

 

Rinse and sort lentils: In a medium pot, boil 5 cups water. Add lentils and

simmer, covered, for 20 to 25 minutes or until cooked but still intact. Strain

and rinse until cooled. Place squash in heavy saucepan with 1/8 inch of water.

Cover and bring to a boil. Reduce heat and cook until soft, about 15 to 20

minutes. Transfer to a large bowl and let cool. Steam or blanch spinach and

rinse in cool water. Mix lemon juice, zest, olive oil, and vinegar. Add lentils,

spinach, vinaigrette and onion to the bowl with the squash. Toss to coat with

dressing. Add salt and pepper to taste. Serve over Earthbound Farm Mixed Baby

Greens.

total fat (1 gram saturated fat); 53 grams carbohydrate; 0 cholesterol; 74

milligrams sodium; 14 grams fiber
