Guest guest Posted March 26, 2003 Report Share Posted March 26, 2003 x-posted * Exported from MasterCook * Caraway Edam Fondue Recipe By :Joanne Stepaniak Serving Size : 6 Preparation Time :0:00 Categories : Appetizer Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups water 3/4 cup raw carrots -- chopped 1/2 cup nutritional yeast flakes 1/2 cup quick-cooking rolled oats 1/4 cup tahini 4 tablespoons arrowroot or cornstarch 3 tablespoons fresh lemon juice 1 1/2 tablespoons onion granules 1 tablespoon caraway seeds -- ground 1 teaspoon salt 1/2 teaspoon mustard powder Place all the ingredients in a blender, and process several minutes until the oats are finely ground, the carrots are pulverized, and the sauce is completely smooth. Pour into a saucepan and bring to a boil, stirring constantly. Reduce the heat to low, and continue to cook for a few more minutes, stirring constantly, until thick and smooth. Transfer to a fondue pot, and keep warm over a very low flame. Per serving: Calories: 128, Protein: 6 gm., Carbohydrates: 15 gm., Fat: 5 gm. Onion or Shallot Fondue: Heat 1/4 C water and 1 T balsamic vinegar, fresh lemon juice, or non-alcoholic white wine in a large saucepan. Add 1/2 lb. sweet red onions or shallots, minced, and cook, covered, until tender (about 10 minutes). Continue as for Caraway Edam Fondue, omitting the raw carrots and caraway seeds. Add the blended mixture to the onions and cook as above. Stir in 1/4 C snipped chives or thinly sliced scallions and freshly ground black pepper, to taste. Serve in a fondue pot.
