Guest guest Posted March 31, 2003 Report Share Posted March 31, 2003 * Exported from MasterCook * Bok Choy and Browned Onions with Broken Noodles Recipe By :Amy Cotler Serving Size : 4 Preparation Time :0:00 Categories : Grains & Pasta {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 14 1/2 ounces defatted low-sodium vegetable broth -- divided 1 tablespoon cornstarch 1 1/2 tablespoons vegetable oil 2 teaspoons butter -- see variation 2 each ginger root slices -- nickle-sized 1 large vidalia onion or small spanish onion -- sliced 2 carrots -- thinly sliced 1 large red bell pepper -- 1-inch cubes 1 small bok choy -- 1-inch pieces (4 cups) (white stems and green leaves separated) 3 ounces ramen noodles -- without seasoning packet 1 1/2 tablespoons soy sauce 3 tablespoons water 1 tablespoon fresh lemon juice 1. In a small bowl, combine 1/3 cup broth with cornstarch. Set aside. 2. In a wok, heat the oil over medium high heat for 1 minute. Add the butter. As soon as it melts, add the ginger, onion, carrots and red pepper. Cook stirring constantly, until the onion turns light brown, about 3 minutes. 3. Add the whites of the bok choy. Stir fry for 2 minutes. Using your hands, break the noodles into small pieces right into the wok. Add the remaining broth, the soy sauce, water, and the bok choy greens, pushing all the noodles down into the liquid. Cook, stirring occasionally, until the noodles are tender, 3 to 5 minutes. 4. Stir the cornstarch and broth mixture to blend thoroughly. Turn the heat up to high and drizzle it over the top of the vegetables. Toss thoroughly until the liquid boil and becomes a bit thickened, 1 to 2 minutes. Add the lemon juice and serve hot.
