Guest guest Posted April 6, 2003 Report Share Posted April 6, 2003 xp Vegetarian and MC-Recipe lists * Exported from MasterCook * Marinated Green Beans With Red Onion Recipe By : " From the Farmers' Market " by Richard Sax with Sandra Gluck Serving Size : 4 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound green beans -- ends trimmed 1/2 small red onion -- cut in thin slivers - (about 1/2 cup) 2 cloves garlic -- smashed and peeled - (to 3 cloves) 1/2 cup olive oil 1/4 teaspoon salt freshly ground black pepper 3 tablespoons chopped fresh dill 3 tablespoons lemon juice -- (3-4) 1. Bring a large pot of water to a full rolling boil; salt lightly. Add the green beans a handful at a time, so that the water remains at a boil. Boil, uncovered, just until crisp-tender, 3 to 4 minutes (the timing can vary, depending on the size and age of the beans). Drain in a colander under cold running water until cool; drain well. Transfer the beans to a large mixing bowl. (Do not chill.) 2. Add the onion, garlic, olive oil, salt, pepper, and dill to the beans; toss gently to combine ingredients and coat the beans. 3. Just before serving, remove the garlic cloves and add the lemon juice, tossing to coat; correct seasonings. Serve at cool room temperature. Serves 4 to 6.
