The butter and margarine contains trans fatty acids. The extra virgin cold pressed olive oil is helpful as is flax oil and some fish oils containing Omega 3. Guest guest Posted April 7, 2003 Report Share Posted April 7, 2003 My understanding was that margarine and vegetable oils, when heated, chemically changed to trans fatty acids, while other oils like olive, sunflower, sesame, etc. and butter did not do this. Also, flax seed oil should never be used in frying because it molecularly changes to TFAs.
