Fresh Butter-Stewed Lima Beans

2 pounds lima beans -- fresh, in the shell

1 cup cold water

6 tablespoons unsalted butter -- cut into pieces

1/2 teaspoon fresh marjoram leaves -- or pinch of dried

1 bay leaf

zest of 1/4 orange in strips

1/2 teaspoon kosher salt

2 tablespoons chopped parsley

 

1. Shell the beans. Place them in a saucepan with the water, butter, marjoram,

bay leaf, and orange zest. Cook over low heat, uncovered, for 25 minutes, or

until the beans are tender but not mushy.

 

2. Season with salt. Garnish with parsley and serve hot. Serves 4 to 6.
