Guest guest Posted April 7, 2003 Report Share Posted April 7, 2003 xp: Veg-Recipes, MC-Recipes, RecipeLu lists * Exported from MasterCook * Sweet Potato Biscuits Recipe By : " From the Farmers' Market " by Richard Sax with Sandra Gluck Serving Size : 12 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 small sweet potatoes -- (10 to 12 ounces) 2 cups flour 1 tablespoon baking powder 2 teaspoons light brown sugar 1/4 teaspoon freshly grated nutmeg 1 large pinch salt 1 large pinch freshly ground black pepper 6 tablespoons unsalted butter -- cold, cut into pieces (3/4 stick) heavy cream -- as needed 1 egg -- well beaten 1. Preheat the oven to 400 F. Wrap the sweet potatoes in foil in a single package and bake until tender, about 1 hour. Remove from the oven, unwrap, and cool. Raise the oven heat to 425 F. 2. When the sweet potatoes are cool enough to handle, peel and mash with a potato masher or ricer. You should have 1 cup. 3. Sift the flour, baking powder, brown sugar, nutmeg, and salt into a mixing bowl. Stir in the pepper and butter and cut the mixture together until it is coarsely crumbled. Make a well in the center and add the cup of mashed sweet potatoes. Stir the mixture together gently with a fork, stirring in enough cream to make a sticky but manageable dough. 4. Transfer the dough to a floured surface and pat to a thickness of 3/4 inch. Use a floured 2 1/4- to 2 1/2-inch biscuit cutter to cut out rounds of the dough; transfer to a well-buttered baking sheet. Re-roll the remaining dough as necessary. Lightly brush the tops of the biscuits with beaten egg. 5. Bake until the biscuits are golden brown, 14 to 16 minutes. Serve hot, with sweet butter.
