Baked Bean Curd and Cremini Mushrooms on Pasta

FOR THE MARINADE:

2 tablespoons lemon juice

1 tablespoon shoyu or soy sauce

1 tablespoon tomato paste

1 garlic clove -- crushed

2 teaspoons chopped fresh oregano

2 tablespoons olive oil

BEAN CURD AND MUSHROOMS:

7 ounces bean curd -- (light)

2 3/4 cups cremini mushrooms

 

1. Prepare the marinade by combining the lemon juice, shoyu, tomato paste,

garlic, oregano, and oil in a large shallow dish.

 

2. Chop the bean curd into bite-size pieces. Stir into the marinade with the

mushrooms and let stand for at least 1 hour.

 

3. Spread out the pieces of bean curd and the mushrooms on a baking sheet and

scrape over any residue of marinade. Bake in a preheated oven, 400F (200C), for

10 minutes.

 

4. Serve hot with bread or with cooked rice, noodles, or buckwheat.

like. Alternatively, you could spear pieces of bean curd and mushrooms on

cocktail sticks and serve them as miniature cocktail kabobs.
