Guest guest Posted April 11, 2003 Report Share Posted April 11, 2003 fresh shiitake may be at your market now. * Exported from MasterCook * Pasta with Spinach, Shiitake Mushrooms and Bean Curd Recipe By :Sarah Brown (UK) Serving Size : 4 Preparation Time :0:00 Categories : Pasta & Sauces Vegetarian Main Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons sunflower oil 1 onion -- finely chopped 2 garlic cloves -- crushed 8 ounces light bean curd -- thinly sliced 10 ounces fresh shiitake mushrooms -- thinly sliced 2 tablespoons shoyu or soy sauce 1 1/2 pounds spinach -- shredded 1 teaspoon sesame oil 12 ounces dried pasta (whole wheat) -- (rotelle) salt and freshly ground black pepper 2 tablespoons toasted sesame seeds -- (2 to 3) to garnish 1. Heat the oil in a large saucepan or lidded skillet, and gently cook the onion and garlic until soft. 2. Add the slices of bean curd and the mushrooms and stir well. Cook slowly until the mushrooms are soft, then add the shoyu or soy sauce. Cover the pan and cook for 4 minutes so that the mushrooms release their juices. 3. Add the spinach in handfuls and stir until it wilts and reduces in size. Cook until soft, then sprinkle with the sesame oil, and season well. 4. Meanwhile, cook the pasta in a large saucepan of boiling salted water until firm-tender. Drain. 5.
