Tagliatelle with Fennel and Fresh Herbs

2 tablespoons butter

1/3 cup olive oil

2 garlic cloves -- crushed

8 ounces fennel bulb -- finely chopped

1 teaspoon lemon zest

1/4 cup chopped fresh parsley

1/4 cup chopped fresh basil

2 teaspoons snipped fennel tops

salt and freshly ground black pepper

8 ounces peas

1 pound fresh tagliatelle

or 12 ounces dried pasta

lemon wedges -- to garnish

freshly grated Parmesan -- optional

 

TIME: preparation: 10 minutes; Cooking: 10 minutes

 

1. Melt the butter in a small saucepan with the olive oil and gently cook the

garlic, fennel, and lemon zest for 5 minutes. Stir in the parsley, basil, and

fennel tops, remove from the heat, and season well with salt and pepper.

 

2. Cook the peas in a saucepan of boiling water for 3-4 minutes, until just

tender. Drain well.

 

3. Meanwhile, cook the pasta in a large saucepan of boiling salted water until

firm-tender, then drain.

 

4. Quickly combine the fennel and herb sauce with the cooked peas and pasta.

Serve immediately with wedges of lemon on the side and sprinkled with Parmesan,

if using.
