Guest guest Posted April 29, 2003 Report Share Posted April 29, 2003 * Exported from MasterCook * Savory Olive Tomato Garlic Toast Recipe By :Sharon Sassaman Claessens Serving Size : 12 Preparation Time :0:00 Categories : Appetizers & Drinks {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 loaf french bread or long, narrow italian bread, (1 to 2) 14 garlic cloves 1 cup pitted ripe olives 2 teaspoons balsamic vinegar 1 teaspoon capers -- drained 2 teaspoons olive oil 1 red tomato -- peeled, seeded, chopped 1 yellow tomato -- peeled, seeded, chopped or another red tomatoes 1/4 cup thinly sliced green onion tops 1 tablespoon thinly sliced fresh basil leaves or 1/2 teaspoon dried basil 1 teaspoon minced fresh oregano leaves or 1/4 teaspoon dried oregano 1 teaspoon minced fresh parsley 1/8 teaspoon salt 1/8 teaspoon freshly ground black pepper Preheat oven to 425F (220C). Cut bread on the diagonal into 24 (1/2-inch-thick) slices. Peel and halve 12 garlic cloves. Run the cut side of each garlic half over both sides of each piece of bread. Place the bread slices in one layer on baking sheets. Bake 5 minutes, turning once, or until crisp and lightly toasted. Allow to cool. Peel and coarsely chop the remaining 2 garlic cloves. Combine chopped garlic, olives, vinegar, capers and oil in a blender or food processor. Process until nearly smooth, stopping to scrape down the sides of the container as necessary. Set aside. Combine chopped tomatoes, green onions, basil, oregano, parsley, salt and pepper in a small bowl. To assemble, spread each toasted bread slice with some of the olive mixture. Divide tomato mixture among the bread slices. Arrange slices on baking sheets and bake 2 to 3 minutes, or until the toppings are heated through.
