Black Bean Salad on Spinach

Amount Measure Ingredient -- Preparation Method

1 2/3 cups cooked black beans

or 15-oz. can black beans; drained

8 1/2 ounces canned whole-kernel corn -- drained

1/2 red bell pepper -- finely diced

3 radicchio leaves -- thinly sliced

2 green onions -- thinly sliced on the diagonal

1/4 cup finely diced celery

1 tablespoon minced fresh parsley

1/4 cup Lemon Soy Dressing Claessens -- (separate recipe)

Spinach leaves -- stems removed

8 thin slices red onion -- for garnish

Parsley sprigs -- for garnish

 

Combine the beans, corn, bell pepper, radicchio, green onions, celery and minced

parsley in a medium bowl.

 

Prepare dressing. Pour dressing over bean mixture and toss. Arrange spinach

leaves on serving plates. Top with bean salad and garnish with onion and parsley

sprigs.

 

Makes 4 servings.

2 tablespoons extra-virgin olive oil

1 tablespoon fresh lemon juice

1 teaspoon soy sauce

1/2 teaspoon Dijon mustard

1/2 teaspoon light brown sugar

1 Dash freshly ground black pepper

 

Combine oil, lemon juice, soy sauce, mustard, sugar and pepper in a small bowl

and whisk until combined.
