Guest guest Posted April 30, 2003 Report Share Posted April 30, 2003 with lemon soy dressing * Exported from MasterCook * Black Bean Salad on Spinach Recipe By :Sharon Sassaman Claessens Serving Size : 4 Preparation Time :0:00 Categories : Beans & Vegetables {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 2/3 cups cooked black beans or 15-oz. can black beans; drained 8 1/2 ounces canned whole-kernel corn -- drained 1/2 red bell pepper -- finely diced 3 radicchio leaves -- thinly sliced 2 green onions -- thinly sliced on the diagonal 1/4 cup finely diced celery 1 tablespoon minced fresh parsley 1/4 cup Lemon Soy Dressing Claessens -- (separate recipe) Spinach leaves -- stems removed 8 thin slices red onion -- for garnish Parsley sprigs -- for garnish Combine the beans, corn, bell pepper, radicchio, green onions, celery and minced parsley in a medium bowl. Prepare dressing. Pour dressing over bean mixture and toss. Arrange spinach leaves on serving plates. Top with bean salad and garnish with onion and parsley sprigs. Makes 4 servings.
