Thirty Minute Minestrone

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1 cup chopped onion

1 cup thinly sliced celery

1 cup diced carrots

2 garlic cloves -- minced

4 cups defatted low-sodium vegetable broth

1 cup finely chopped cabbage

1 cup diced zucchini

1 2/3 cups cooked white kidney beans

or 15-oz canned beans; drained

14 1/2 ounces Italian-style stewed tomatoes -- (canned)

2 tablespoons minced fresh parsley

 

Heat the oil in a large, nonstick Dutch oven over medium-high heat. Add the

onion, celery and carrots and cook, stirring frequently, until the vegetables

begin to brown, 5 to 7 minutes. Add garlic and cook, stirring, 1 minute.

 

Add broth, cabbage and zucchini and bring to a boil. Reduce heat, cover and

simmer 10 minutes, or until vegetables are firm-tender.

 

Meanwhile, place half the beans in a blender with the liquid from the stewed

tomatoes and process until smooth. Dice tomatoes and add to soup. Add blended

bean mixture and parsley and return to a boil. Reduce heat, cover and simmer 5

minutes.

 

Makes 6 to 8 servings.

 

VARIATION:

Add 1 cup cooked pasta, such as macaroni, to the soup. If you desire, you can

sprinkle each serving with some freshly grated Parmesan cheese.
