Guest guest Posted May 20, 2003 Report Share Posted May 20, 2003 * Exported from MasterCook * Quick Vegetarian Mole Recipe By :Associated Press May 14, 2003 Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Main {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons peanut or safflower oil 1 medium red onion -- chopped 1 large red bell pepper -- seeded and chopped 2 garlic cloves -- crushed 2 teaspoons ground coriander 1 teaspoon ground cumin 1/2 teaspoon ground cinnamon 1 pound sweet potatoes -- cut into cubes 1 pound canned chopped tomatoes (about 2 cups) 1 pound canned kidney beans (about 2 cups) -- rinsed and drained 1 teaspoon sweet chile sauce -- (1 to 2) 1 1/4 cups water 1 ounce dark chocolate -- grated 2 tablespoons chopped fresh cilantro Salt and freshly ground black pepper 1. Heat the oil in a large saucepan over a medium-high flame. Saute the onion, pepper, garlic and spices for 5 minutes, or until onion is tender and spices fragrant. 2. Add the sweet potatoes, tomatoes, beans, chile sauce and water and bring to a boil. Cover, reduce heat to low and simmer for 30 minutes. 3. During the final 5 minutes, stir in the chocolate and cilantro. Taste and season with salt and pepper. Ensure the potatoes are cooked through. TIPS - Pickford's recipe replaces the turkey with sweet potatoes and kidney beans, both of which are nicely complemented by the sauce. She also keeps preparation to under 45 minutes by sticking with simple but satisfying seasoning. To reduce preparation time even more, partially cook the potatoes in the microwave instead of in the sauce as the recipe calls for. Reduce the water to 1 cup and the final simmering time to 10 minutes. New potatoes can be substituted for the sweet potatoes. For a more intense tomato flavor, substitute the liquid from the canned tomatoes for some of the water. Be sure to buy additional dark chocolate to nibble on while cooking. It is amazing dunked in just a drop of balsamic vinegar. This isn't Mexican, but it is mighty good.
