Basic Vegetable Stock

1 leek -- trimmed and chopped

1 carrot -- chopped

1 celery rib -- chopped

1 medium zucchini -- chopped

1 medium tomato -- chopped

1/2 red onion -- chopped

6 garlic cloves chopped

4 sprigs fresh basil

2 sprigs fresh flat-leaf parsley

2 sprigs fresh oregano

2 bay leaves

6 peppercorns

 

1. In a stockpot, combine all the ingredients, add 8 quarts water, and bring to

a boil over high heat. Reduce the heat and simmer very slowly for about 2 hours.

 

2. Strain through a colander-lined with cheesecloth into a clean bowl or pan,

pressing against the vegetables with the back of a spoon. Discard the

vegetables. Cool slightly, cover, and refrigerate for up to 4 days. Or freeze

for up to 3 months.

 

Per Serving (1 cup): 19 calories total fat (8% of calories) 0 saturated fat 0 mg

cholesterol 1 g protein (14% of calories) 4 carbohydrates (18% of calores) 1 g

fiber 20 mg sodium

 

Makes 5 quarts

 

Note: While you can use vegetables other than the tomato, zucchini and leek

suggested here, don't use the cruciferous vegetables (broccoli, cauliflower,

broccoli rabe, cabbage, Brussels sprouts); their flavor will overwhelm the

stock. Beets will turn the stock red and carrot greens will make it bitter.

Otherwise let your own taste be your guide, adding vegetables such as beans,

peas, winter squash, and potatoes.

 

Here's proof that a flavorful stock doesn't have to start with butter and ten

pounds of vegetables. I've substituted leeks for the usual one or two yellow

onions found in more classic stocks, and boosted the flavor with a generous use

of garlic, basil, and oregano.
