Vegetarian: Kabobs Serving Size : 4 Preparation Time :0:00 Categories : Main Veg Skewers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 9 ounces firm tofu -- cut into 16 cubes 1 large orange bell pepper 8 cherry tomatoes 8 broccoli florets (about 3 ounces) MARINADE: 3 tablespoons vegetable oil 1 tablespoon sesame oil 3 tablespoon soy sauce 1 teaspoon grated fresh ginger 1 teaspoon sesame seeds 2 tablespoons rice wine vinegar 1 green onion -- finely chopped 1. To make marinade, mix together in a large bowl vegetable oil, sesame oil, soy sauce, ginger, sesame seeds, rice wine vinegar and green onion. 2. Add tofu cubes to marinade, toss gently to coat, cover and refrigerate 2 hours. 3. Place pepper on the grill over hot coals and cook, turning frequently, until skin blisters and becomes charred. 4. Place pepper in a plastic bag and let cool and soften 30 minutes. Peel and discard skin and seeds. Cut flesh into 8 thick slices. 5. Remove tofu from marinade, reserving remaining marinade for basting. Thread tofu, pepper strips, tomatoes and broccoli on skewers. 6.
