Asparagus and Shiitake Mushroom Splendor

Amount Measure Ingredient -- Preparation Method

oil -- (a little)

1 teaspoon chopped fresh ginger -- (or sliced)

2 cups asparagus pieces -- (1.5-inch)

1 small carrot -- 1.5 inch strips

1 cup fresh shiitake mushrooms -- halved if large

2 tablespoons vegetarian stir fry sauce

4 tablespoons water

4 teaspoons High Energy Sesame Mix -- (see recipe)

 

1. Brown ginger in a skillet with a little oil; then add asparagus. Carefully

pour water around sides of skillet, then add carrots, mushrooms and stir fry

sauce. Add a little more water if needed for steaming.

 

2. Cover, turn heat off and steam for a few minutes; make sure vegetables keep

some crunch. Serve immediately, garnished with the sesame mix.

1 pound sesame seeds

2 teaspoons salt

3 tablespoons nutritional yeast

 

In a nonstick frying pan, roast seeds with salt on medium high (without oil)

until seeds are golden brown. Stir constantly to prevent burning. Mix in

nutritional yeast.
